For Chef Chelsea Turner, fresh from a stint serving up fabulous meals to vacationing celebrities in Costa Rica, there is no need to make this choice so difficult. After all, with the right ingredients, seasoning and preparation, even the most stringent health fanatic can have both!
One afternoon, Paula rounded up some friends and had Chef Chelsea reveal a fresh and easy dinner favorite - Ahi Tuna Poke. The results were amazing and well worth trying in your own healthy kitchen:
Fresh Tuna Poke with Avocado
Serves 6 to 8 servings
2kg of tuna sashimi (cut into pieces of approximately 6cm)
1 onion, cut into thin half moons
1/2 cup chopped chives
3 tablespoons Tamari sauce
1 teaspoon of sesame oil
2 tablespoons olive oil (add more if needed)
1 tablespoon sesame seeds
1 package gomaii (seaweed salad)
Black sesame seeds to decorate
Pat the tuna lightly to dry and cut into small cubes. Place in a mixing bowl and add the onions, scallions, tamari sauce, oils and seeds. Use of a quarter of avocado for each serving by cutting into four to five slices. Place avocado in serving dish and top with tuna. Add some seaweed salad and garnish with black sesame seeds.
